I made my first raw cake!!! Sniff sniff I’m so proud!!
Found it from raw food on you tube and thought it looked delectable!!
Inspired and motivated by the one simple change programme I gave it a shot!
It consists of wholefoods gluten free dairy free vegan …… I’m not striving toward raw food culture, I like a mixture of cooked and raw….though I find for deserts and sweets, these raw food recipes really work for me!

Ingredients
1 1/2 cup dates
1/2 cup dried white mulberries ( I didn’t have any mulberries so used golden raisins
About 6 bananas!!!!!!
1/2 cup cashew nuts
1 cup blackberries
Couple of lavender leaves
Coconut water
A food processor
Blender
You re ready for your first layer!
The base
Put 1 cup of dates 1/2 cup dried mulberries and 1tblsp coconut water into the food processor
Line the base of a springform tin with mixture
Layer 2
Blend 3 bananas and the cashew nuts until creamy
Pour onto the base layer
Blend 3 bananas and 1 cup blackberries, the lavender leaves and tbsp coconut water until creamy
For the glaze
1/2 cup blackberries
Couple of dates
Tbsp Coconut water
Blend and pour over the top
Pop into the freezer for 4-6 hours
Raw cake!!!
……… I didn’t know whether to eat frozen or thawed!…. So we tried both, it’s fresh cake and needs to be eaten fresh if thawed, frozen was nice too!
Tastes not like cheese cake but clean fresh and satisfying!
Delicious to look at, will satisfy sweet tooth and impress guests, you will only need one slice!!
Kids haven’t tasted this yet apart from helper Sam who cleaned up the blender with his fingers!…….but thumbs up from hubby!
