Comfort food winner 2014

This is such a winner in our house!

We have a couple of variations that all work! Again I’m not precise with quantities, depends on size of family and their appetites etc.

The basics of this dish

White fish cod haddock fillets.
Spring onions
Baby spinach leaves ( well washed)
White potatoes
Veggie stock
Boiled eggs

Step by step to the table

Peel and boil the potatoes
Mash them with butter and salt if you wish. I like to add lemon juice in the mash as it compliments the fish. Also adding sweet potato or parsnip to the mash is tasty.

Boil 2 eggs

Fry the chopped spring onion in little butter.

In an oven proof dish break up the fish fillets, and place them in the bottom of the dish.
Add the spring onion and baby spinach.
Peel the eggs and cut into halves then place them in the oven dish too

Make a cup of vegetable stock with an organic stock cube and boiled water. Pour over the fish spinach and eggs.

Top off with your mashed potatoes and pop into the oven for about 30 mins….enough to cook the fish and crust the top of the mash.

Another variation is to use cream and cheese instead of stock. I try to limit our use of dairy thats why i choose stock.

* originally inspired by Jamie Oliver ( it was the creamy version) but I kept the eggs and lemon juice in the mash ๐Ÿ™‚
